Shikimisyre er et intermediat i biosyntesen af phenylalanin, tyrosin, og tryptophan via chorisminsyre. Forbindelsen er endvidere et nøgleintermediat i biosyntesen af lignin og andre aromatiske biomolekyler som ubiquinon og plastoquinon. Shikimisyre forekommer i træet Illicium anisatum (på Japansk: Shikimino-ki - deraf navnet), er derudover også tilstede i stjerneanis (Illicium verum) og Eucalyptus citriodora (Payne and Edmonds, 2005).

MV= 174,15 g/mol; bruttoformel: C₇H₁₀O₅; SMP= 188-190 ^oC (L-shikimisyre).
